Herbs, edible flowers may be dried in a food drier and
stored in sterile canning jars.
If you do not have amber jars, place the herbs in clear sterilized quart jars and store in a drawer or other dark storage area. |
Store Dried Herbs in Sterilized Amber Jars: Store dried herbs in sealed amber quart jars that has been sterilized. Sterilize the jars in the oven. Wash the jars with soap, rinse thoroughly, leave the jars wet, put them in an oven at 450 degrees for twenty minutes. Be certain to put the herbs in a cool oven, then set the temperature at 450 and timer for 25 minutes. After the time has expired, turn off the heat, but leave the oven closed. In about an hour you may remove your warm and sterile jars. Place your dried herbs in the jar, seal and label the jar.
Note: We have insect problems, larvae, that penetrate plastic bags (or were already in there) sometimes infest our herbs. We have started to double seal the herbs: first in a brown bag, then place that bag in a zip lok or twist tie plastic bag, then freeze.
