Salad Dressings...(for more salad dressings)

Watercress dressing

Ingredients:
half cup minched watercress
half cup chopped wild leeks
1 egg yolk (optional)
2 T fresh lime juice
1T Dijon mustard
1/2 t salt and pepper to taste
3/4 cup olive oil
2 T grated lime (zest)

Preparation:  Puree all the ingredients except the lime zest and oil.  Then blend in slowly the
the oil, very slowly, until sauce is thick and smooth.  Stir in lime zest and refrigerate.  Makes
one cup.  Use on salads, sandwiches, crostini, fish, meat, marinades. 

 

Watercress Dressing No. 2

Ingredients:
cup watercress
2 leeks, chopped
1T white wine vinegar
2 T chicken broth
1 t lemon or lime
1 t finely minced lemon zest
1T hot water
salt and pepper to taste

Preparation:  Blend all ingredients until smooth.  Refrigerate and whisk before using.  Use on salads, sandwiches,
crostini, fish, meat, marinades.

 

Prickly Pear Salad Dressing

-1 T  juice from can of pickled jalapenos
-3T  apple cider vinegar, or 3T lime juice, or 3T lemon juice
-8 T olive oil or about a 1/4 cup
-one diced garlic clove, or two diced wild leeks
-1/2 t each of oregano
-1t fresh basil
-salt and pepper
-1/4 cup juice from Opuntia fruit, prickly pear cactus fruit (optional)

Preparation: Mix ingredients together.  Toss with nopalito salad.  Nopalito preparation.
