Jerusalem artichokes, members of the sunflower family, grow to twelve feet in my garden.  the flower is sunflower like but diminutive in relation to the size of the plant.  (Bean and 'chokes Recipe)

Artichokes, or sun chokes are available year around.  Peel and eat raw, add to salads, boil or bake like a potato, add to soups and stews.  Mashed artichoke can be used to thicken chowders.
