Calendula officinalis blossoms may be dried and used year around.  Below with rice.  German researchers melt hot pig fat over calendula petals and prepare a salve that is used to treat phlebitis and varicose veins externally for skin conditions.  (more)
Calendula petals on rice.   Cook a number of petals in rice for color and flavor.  Some say this is a substitute for saffron, that's a real stretch.
Calendula has an edible leaf and edible flower.
Calendula makes an excellent companion plant, here grown with Swiss Chard.
